No Contact Crockpot Veggie Soup

I have not left my house in almost 48 hours. Normally icy winter weather sends me over the edge but this weekend it has been a complete weekend of introvert heavenly solitude. I played around in the kitchen and experimented quite a bit. I may starve before Erica feeds me some of her yumminess so I will keep circling back to the kitchen myself.

This yummy No Contact Crockpot Veggie Soup really hit my soul this weekend. When I first thought of combining pumpkin and black bean I thought I might be making something totally disgusting. But it turned out to be very hearty, wholesome yumminess for my yumhole. I stuck it in the crockpot so I didn’t have to think back to it once the idea hit me.

This is what you will need:

  • 1 cup chopped red bell pepper
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 can diced tomatoes
  • 1 can pumpkin
  • 1 box vegetable broth
  • 1 can black beans
  • 2 tbs tumeric
  • 2 tbs smoked paprika
  • 1/4 cup chili powder
  • 4 tbs cumin
  • sea salt to taste
  • 1 bay leaf

Whisk the pumpkin into the vegetable broth.You can make the soup more creamy by lowering the amount of vegetable broth.

Dump in the remaining ingredients and spices. Cook on high in the crockpot for 4-6 hours or just until the onion is translucent. Badda boom. Badda bing.

Leave this plugged in on the counter with some beer bread. Add festive holiday napkins to avoid the idea that we have no heart. There is certainly no need for a family meal if you provide for everyone healthy and yummy alternatives like No Contact Crockpot Veggie Soup!
