Carbs. If you don’t love them, there’s a serious problem with you. I am like Oprah, “I LOVE BREAD.” And pasta is no exception.
I was cooking dinner for just me last night and wanted to throw something together with what I had in the pantry and in the freezer. I’ve had a bag of frozen shrimp for awhile and thought, “let’s do it. Let’s get down to business.” And this is what I came up with. Warning, this did come out spicy as hell, which I like, but you might want to cut back depending on if you like your taste buds or not.
What you’ll need:
- Olive Oil
- Shrimp (or chicken or veggies or get off my back, I don’t care what you use)
- I wish I had onions
- Frozen peas
- Mozzarella Cheese (If you are one of those people who think you should not add cheese to seafood, BACK OFF. I LIKE CHEESE.)
- Seasoning of choice (My pasta came with a seasoning pack, it had red pepper flakes and italian seasoning, so I just added some salt and pepper)
First things first, I boiled the water and go the pasta going. My pasta needed to cook for 15-18 minutes, so this was the longest part of the process.
I sauteed the mushrooms in olive oil and butter and then added all of the seasoning. I wish I had onions, but I wasn’t about to go to the store just for a damn onion. When the pasta had about 5 minutes left, I added the crushed garlic and the shrimp to the mushroom/seasoning/sauce mixture.
With a couple minutes left I added the peas so they wouldn’t get all mushy and gross.I’ll be honest, I ate several spoonfuls of just this concoction and it was wonderful. I also ate an entire bag of croutons while I was cooking. I was REALLY hungry.
When the pasta was al dente, I drained it and plopped it in with the mixture of goodies. I stirred it up to get it all covered in the sauce and then added some Mozzarella cheese. And yes, it made a TON, I have about 6 containers in the fridge that I’ll be bringing to work this week for lunches.
It turned out pretty tasty, and since I was eating dinner alone I could sweat all I wanted from the red pepper flakes without feeling embarrassed. That’s the best kind of meal.
