I haven’t met many people who don’t like Chipotle. There are videos dedicated to this very subject. They have created the ultimate fandom, and I understand why. But sometimes, and by sometimes I mean most days of the week, I come home from work, take off my bra, put on my yoga pants and park my butt on the couch. I ain’t leaving this house. So what do I do when I get a hankering for a delicious burrito bowl with fajita veggies? Oh yeah. I make it at home.
Here’s what you’ll need:
- Chicken (or whatever meat-like substance you’d like)
- Bell peppers
- Taco seasoning
- Black Beans
- Sour Cream
First things first, slice up the onions, peppers and chicken to thin strips. The thinner you get them, the quicker they’ll cook, which means the sooner you are to park yourself back in front of the TV.
Sprinkle the veggies and chicken with taco seasoning and olive oil, toss it around and stick it in a 400 degree oven for around 30 minutes, stirring half way through.
The chicken gets some nice color, the veggies soften and all you had to do was put 2 sheet pans in the oven. I LIKE EASY! Once you take the chicken and veggies out of the oven, squeeze some lime on top for a little zip. Now it’s a fiesta!
Now, lets talk about toppings. I like to go ALL out, load up that bowl. After all, you’re not trying to impress anyone.
Now it’s time to assemble! And by assemble, I mean dump everything into a bowl.
This is one of my favorite meals to make, cheaper than a trip to Chipotle and I could enjoy it with the girls free from their bra-prison.
